2MyHero has several things in the works right now. One is a special guide we’re putting together called – 52 Ways to Creatively Support REDFriday.

Routines are great. No doubt. And if you have a favorite (or, say, maybe 5 favorite) REDFriday t-shirts, we totally encourage you to wear those on Friday’s! 

But, if wearing a REDFriday t-shirt isn’t your thing or if you’d just like to be a bit more creative with the REDFriday theme then join us as we inspire you with new ideas and expressions.

We’re looking beyond red clothing into food, accessories, decor, gifts for wives or moms or dads who have a loved one deployed . . . and beyond. We’re looking for creative, but still practical ways to make a statement in support of our troops.

We love the REDFriday movement! It helps that we love the color red!

Today we have a sneak peek into 52 Ways to Creatively Support REDFriday with a recipe we have tried out, and shared with friends. The original recipe came from Joel Furman’s Eat to Live Cookbook. We’re big fans of his recipes and approach to healthy eating!

Speaking of food, summer is winding down, and right now, the watermelon in the stores is at it’s peak. So, today, we wanted to share a favorite recipe that focuses on two main ingredients that are red – watermelon and red peppers.

This cold watermelon soup is wonderfully refreshing, pairs easily with other foods, and your family or friends will love it! Be sure to let everyone know when you serve it that you made it specifically on Friday. Take a moment of silence or prayer to remember our troops before you eat.

If you know someone close by who has a loved one deployed, take them a batch of this yumminess and let them know that you haven’t forgotten their loved one. Express that you are all in on REDFriday. If you can, carve out a little extra time to spend with them on a Friday (or another day if it works better) to hear an update on how things are going both for their loved one who is deployed and for them here on the home front.

You might have one or more of these ingredients growing in your garden. All the better! Don’t worry about being exact with the amounts. Add more bell pepper or shallots if you want it a bit more savory. Add or take away a lime depending on how tart you like things. Seriously, it’s pretty flexible!

Watermelon Gazpacho

1 seedless watermelon (cube about 3/4 of the watermelon and dice the remaining 1/4)

5 cucumbers, peeled (3 chopped, 2 diced)

1 red bell pepper finely diced

1/4 cup minced shallots

3 limes, juiced and zested

about 1/4 cup of fresh mint leaves, fine chiffonade cut 

If you don’t know how to do a chiffonade cut, it’s super simple:

Line up the mint leaves . . .  roll them tightly . . .  slice the roll into thin slices.

Blend the cubes of watermelon and the chopped cucumbers in a blender or food processor. You’ll need to do this in at least two batches depending on the size of your machine. Allow to chill an hour or more. It’ll keep for a day or two, so make ahead if that works better for you.

In a separate bowl mix together the diced watermelon, remaining cucumber, shallot, lime juice, zest and mint. This is pretty tasty just by itself. You could alternatively just dice all the ingredients and make a salad!

Serve the soup with a dollop of the salad mixture. 

You can easily pack this in containers or glass quart mason jars for the soup and smaller pint jars for the salad if transporting.
